Greek Salad Pita

1 whole-wheat pita

Several leaves red lettuce

1/4 green bell pepper -- thinly sliced

3 Greek olives -- pitted and sliced

2 ounces feta cheese -- drained and

crumbled

1/2 cup Yogurt Dill Dipping Sauce

(see separate recipe)

 

SERVES 1

 

This salad in a sandwich with Yogurt Dill Dipping Sauce is fun and flavorful.

 

Toast or grill the pita. Cut in half to form pockets. Fill each pocket

with lettuce, bell pepper, olives, and feta cheese. Drizzle 1 tablespoon

Yogurt Dill Dipping Sauce inside each pocket. Serve an additional

tablespoon of sauce on the side for dipping.
