Golden Potato Medley

1 tablespoon soy sauce

1 onion -- thinly sliced

3 cloves garlic -- minced

2 carrots -- thinly sliced

4 russet potatoes -- scrubbed and diced

1 cup mushrooms -- sliced

1 red bell pepper -- diced

1 zucchini -- diced

1/4 cup chopped parsley

1 teaspoon salt

1 teaspoon turmeric

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

 

SERVES 6

 

This dish will invite your eaters to sing praises!

 

Heat 1/2 cup of water in a large skillet. Add the soy sauce, onion, and

garlic. Cook until the onion is soft, about 5 minutes.

 

Add the carrots, potatoes, and another 1/2 cup of water. Cover and cook

until the potatoes are just tender, about 15 minutes. Stir occasionally,

and add a small amount of extra water if the mixture begins to stick.

 

Add the mushrooms, bell pepper, zucchini, parsley, salt, turmeric, black

pepper, and thyme. Cover and cook another 5 minutes.
