Add a small amount of water if needed to prevent the vegetables from sticking. Add the eggplant, mushrooms, tomatoes, wine, apple juice concentrate, bay leaves, paprika, basil, black pepper, and soy sauce. Bring to a simmer, then cover and cook until the flavors are well blended, about 1 hour. Remove the bay leaves and serve over cooked whole-wheat pasta with a generous spoonful of Healthful Homemade Sour Cream.
