Hungarian Goulash

2 teaspoons toasted sesame oil

2 large onions -- thickly sliced

2 green bell peppers -- diced

10 cloves garlic -- minced

1 globe eggplant -- diced

2 cups mushrooms -- cut in half

1 28 oz can chopped tomatoes

1 cup red wine

1/2 cup apple juice concentrate

2 bay leaves

2 teaspoons paprika

1 teaspoon dried basil

1/2 teaspoon black pepper

2 teaspoons tamari soy sauce

8 ounces whole wheat fettucine -- cooked, rinsed, and drained

Healthful Homemade Sour Cream

 

Heat the sesame oil in a large pot and saute the oniions, bell peppers, and

garlic for 5 minutes. Add a small amount of water if needed to prevent the

vegetables from sticking. Add the eggplant, mushrooms, tomatoes, wine, apple

juice concentrate, bay leaves, paprika, basil, black pepper, and soy sauce.

Bring to a simmer, then cover and cook until the flavors are well blended, about

1 hour. Remove the bay leaves and serve over cooked whole-wheat pasta with a

generous spoonful of Healthful Homemade Sour Cream.

Healthful Homemade Sour Cream

1 10.5 oz package firm silken tofu

1 tablespoon seasoned rice vinegar

1 tablespoon lemon juice

1 teaspoon cider vinegar

1 teaspoon Sucanat

1/2 teaspoon salt

 

Combine all the ingredients in a blender or food processor and processs until

completely smooth.

 

Description:

dressings and sauces. "
