Parsley Pesto with Soba Noodles

8 ounces soba noodles

1/2 cup chopped red onion

3 to 4 cloves garlic

2 bunches fresh parsley -- stems removed

3 tablespoons fresh lemon juice

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

 

Cook the pasta in boiling water until it is tender. Drain and rinse.

 

Process the onion and garlic in a food processor until finely chopped. Add the

parsley, lemon juice, olive oil, salt, and black pepper. Process until smooth.

Add to the pasta, toss to mix, and serve.
