Guest guest Posted June 7, 2001 Report Share Posted June 7, 2001 * Exported from MasterCook * Vegetarian Jambalaya Recipe By : Light & Tasty 6/01 Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium onion -- finely chopped 1 cup celery -- chopped 1 cup green pepper -- chopped 1 cup fresh mushrooms -- sliced 2 cloves garlic -- minced 1 teaspoon olive oil 3 cups fresh tomatoes -- chopped 2 cups water 1 cup raw long grain rice 2 tablespoons soy sauce 1 tablespoon fresh parsley -- minced 1/4 teaspoon salt 1/4 teaspoon paprika 1/8 teaspoon cayenne 1/8 teaspoon chili powder 1/8 teaspoon pepper 6 tablespoons sour cream In a large skillet, saute the onion, celery, green pepper, mushrooms and garlic in oil until tender. Stir in the tomatoes, water, rice, soy sauce, parsley, salt, paprika, cayenne, chili powder, and pepper. Transfer to a 2 1/2 quart baking dish sprayed with cooking spray. Cover and bake at 350 degrees for 65-70 minutes or until rice is tender and liquid is absorbed.
