The mock chicken loaf and mock turkey legs that we got as kids in school cafeterias (where I lived) were not vegetarian. they had chicken and sausage etc. here's a recipe for a sweet curry that IS vegetarian. * Exported from MasterCook * Orange Mock Chicken Curry Recipe By : Karen Lopez Serving Size : 4 Preparation Time :0:00 Categories :Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 50 grams Textured soy protein -- Large Chunks or strips 2 cups Water 1 large Onion -- chopped 6 stalks Celery -- chopped 2 tablespoons curry powder 1 tablespoon vegetarian bouillon 1 teaspoon cumin 1/2 cup pineapple chunks in water -- drained 1 can mandarin oranges in light syrup 3 cups brown rice, cooked 1/4 teaspoon red pepper flakes -- more or less to taste In a large skillet on High heat, add water, onion, celery, spices, and bouillon. Bring to a boil. Turn heat to simmer, then add TVP. Simmer for 15 minutes, or until TVP is soft. You may need to add more water to ensure there is enough sauce. Add pineapple and mandarin orange slices. Stir lightly, taking care not to crush the orange segments. Serve over brown rice or Brown Basmati. The mock chicken " loaf " that I was talking about was totally vegetarian, one my my vegetarian friends made it for me a while ago. I was not aware that you could get that in schools though!! Well, maybe not here in Australia anyways!! And I had never heard of the mock turkey legs before!!! Thanks again Pat, it was appreciated. THis is all I can find....I've got two recipes, but I'm only posting one. (The other one is from The Book of Tofu, and you use fresh yuba (soy milk skin basically) this one uses the dried which I can find. I haven't tried this yet, but I did buy the skin. This is also steamed, not baked......I guess you can try baking it instead of frying it. * Exported from MasterCook * Mock " Chicken " - Easy Vegan Cooking Recipe By :Leah Leneman Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons soy sauce 1 tablespoon cane sugar 1 tablespoon sesame oil 1/2 pound dried bean milk sheets -- a.k.a. yuba vegetable oil -- as required for frying Heat the soy sauce, sugar and sesame oil in a small saucepan until boiling, then remove from heat and leave to cool. Cover the bean milk sheets with hot water and leave for 2-3 minutes until soft. Drain. Lay a single sheet out on a large piece of muslin and sprinkle with a little of the sauce mixture. Cover with another sheet and more sauce until all have been used up, finishing with a layer of bean milk sheet. If the sheets are not whle but fragmented - as will very likely be the case - it does not matter; just make up a whole sheet of pieces without worrying at this stage about them coherine. If any pieces are tough rather than tender then discard those.
