Very Berry Cobbler

2/3 cup whole wheat pastry flour

1/2 cup Sucanat

1 1/2 teaspoons baking powder

1/4 teaspoon salt

2/3 cup almond or rice or soy or nonfat dairy milk

2 1/2 cups berries

- such as boysenberries or blackberries

- or raspberries

 

If you love berries as i do, here is an enjoyable, low-fat way to

serve them.Top this off with a scoop of frozen nonfat yogurt or

nondairy vanilla dessert.

 

Preheat the oven to 350F. In a mixing bowl, stir together the dry

ingredients. Add the milk and stir until the batter is smooth. spread

the berries in a 9x9 inch baking dish. Pour the better over the

berries. Bake for 45 minutes until lightly browned.
