Kale has been my all-time favorite green since i was a kid! It also contains some powerful antioxidants. Steam the winter squash until it is just tender. Wash the kale, remove the stems, and tear or cut the leaves into small pieces. Heat the oil in a large nonstick skillet and saute the onion and garlic for 5 minutes. Add the kale and cook, stirring frequently,until tender, about 5 minutes.
