Quick Black Bean Chili

1 tablespoon soy sauce

2 onions -- chopped

4 cloves garlic -- crushed

2 teaspoons dried oregano

1/2 teaspoon cumin

1/4 teaspoon black pepper

1 4 oz can diced chiles

1 15 oz can crushed tomatoes

2 15 oz cans black beans -- drained and rinsed

1/4 teaspoon salt

chopped cilantro

 

Serves 4 to 6. Heat 1/2 cup water and the soy sauce in a large pan, then add

the onions and garlic. Cook over medium heat until the onions are soft, about 5

minutes. Add the oregano, cumin, black pepper, and diced chiles. Cook 5

minutes over medium heat. Add the tomatoes, black beans, and salt. Cover and

simmer 20 minutes or longer. Top with a sprinkling of chopped fresh cilantro.

 

Description:

" This is a mild chili, delicious with brown rice and a green salad. If

you like a hotter chili, add some cayenne or chopped jalapeno

peppers. "
