Pilaf With Dried Fruits

1 teaspoon olive oil

1 cup brown basmati rice

15 ounces canned Swanson's Vegetable Broth

2 cups apricot nectar

1/4 teaspoon coriander

3/4 cup yellow split peas -- rinsed

1/2 cup chopped dried apricots

1/4 cup golden raisins

1/4 cup thinly sliced green onions

2 tablespoons coarsely chopped roasted peanuts

 

Serves 8

 

A lovely rainbow display of fruits and rice.

 

Heat the oil in a large pot and saute the rice until it becomes opaque,

about 3 minutes. Add the vegetable broth and 2 tablespoons of water, then

cover and cook until the rice is tender, about 50 minutes.

 

In the meantime, heat the apricot nectar and coriander in a saucepan. Add

the split peas and chopped apricots, then cover and simmer until the peas

are just tender, about 40 minutes.

 

Combine the rice and peas, then stir in the golden raisins. Transfer to a

platter and top with chopped green onions and peanuts.
