Kathleen * Exported from MasterCook * Home-Style Spuds And Garden Sausage Recipe By : GardenCuisine by Paul Wenner, page 277 Serving Size : 8 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Potatoes Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 7 red potatoes 4 GardenSausage patties 1 onion -- chopped 3 cloves garlic -- minced 1 cup VeggiePack (see separate recipe) 1/3 cup chopped green onions 1 tomato -- diced, for garnish 2 tablespoons chopped parsley -- for garnish Salt Fresh-ground black pepper Serves 8 There are some serious good-tasting home-fried potatoes that not only deliver on flavor but are low-fat as well. Scrub the potatoes but do not peel them. Cut into 1/4-inch cubes. Steam over boiling water until just tender when pierced with a fork, 10 to 15 minutes. Remove from the pan and set aside. Heat a large nonstick skillet to medium heat and fry the GardenSausage patties on both sides until golden brown. This will take 3 to 5 minutes per side. Dice and set aside. Heat 1/4 cup of water in the same skillet and add the onion and garlic. Cook until the onion is soft and golden, about 5 minutes, then add the cooked potatoes and mixed vegetables. Cook, stirring gently, until the mixed vegetables are tender, about 5 minutes. Just before serving, fold in the GardenSausage and chopped green onions. Garnish with diced tomato and chopped parsley. Sprinkle with salt and pepper.
