Cool Sesame Asparagus

1 pound fresh asparagus

1 tablespoon unhulled sesame seeds

1 tablespoon distilled white vinegar

1 tablespoon seasoned rice vinegar

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon toasted sesame oil

 

You've heard of " cool as a cucumber " , well, try this recipe on a hot

day and see what happens!

 

Snap the tough ends off the asparagus,then cut it on the diagonal

into 1 1/2-inch pieces. Drop into boiling water for 1 minutes. Drain

and immediately plunge into cold water until chilled. Pat day.

 

Toast the sesame seeds in a nonstick skillet over medium heat for 2

to 3 minutes, stirring constantly.

 

Mix the vinegars, soy sauce, honey and toasted sesame oil in a bowl.

Add the asparagus and 2 teaspoons of the sesame seeds. toss to mix.

Refrigerate 1 to 2 hours, tossing occasionally. Garnish with the

remaining sesame seeds before serving.
