Papaya-Mint Salsa

Amount Measure Ingredient -- Preparation Method

1 small white onion -- peeled and quarted

1/4 cup fresh mint leaves -- peeled, quartered and seeded

2 ripe papayas

2 tablespoons fresh lemon juice

1/4 teaspoon cayenne pepper

1/8 teaspoon salt

 

Chop the onion and mint together finely using a mezzaluna or small knife--do

not use a food processer. Add the papaya in 2 batches, and chop. Add the

remaining ingredients and chop until well combined
