“Real” Cheese Croutons

Amount Measure Ingredient -- Preparation Method

1/2 cup sharp cheddar cheese -- shredded

2 tablespoons parmesan cheese -- grated

 

In a small bowl, mix the cheeses. Sprinkle the cheese into a heavy,

non-stick skillet. Cook over medium-high heat for 2-3 minutes until the

cheeses are melted and bubbly. Tip skillet to allow excess oil to collect

in one place. Remove excess oil with a spoon. Carefully lift the large

crouton from the pan with a spatula and drain & cool on a paper towel. When

cooled, break into 1/2 " size pieces.

Spring green and cheese crouton salad

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

6 cups Spring salad greens ( combination of any

or all of these....spinach, mache,

watercress and/ or bite size torn romaine

)

2 cups radicchio

vinaigrette dressing

" real cheese croutons " ( see other recipe

)

 

Mix greens, toss with a light amount of dressing. Add cheese croutons and

serve.

Notes: Use only 1 tablespoon of dressing for each cup of greens...or place

a small amout of dressing in a bowl and then toss in the salad. Never pour

dressing on top of a salad, always toss it with the salad.
