Easy Vegetarian Chicken Pot Pie (And a Question)

I make a killer pot pie (I'm not going to be humble about this one...grin).

I've taken it to work and actually got called a liar by some people who

insisted that there was meat in the pie. The recipe is so simple but it

requires an ingredient that I've only been able to find at a local health

food store. It's called " Chicken Style Wheat Meat " and it's made by a

company called White Wave. They say it's not among their best sellers but I

think it's only because they don't promote it. It's seitan, but not like

regular stuff. It's not packaged in liquid but instead is frozen in a 1

pound block. It's awesome stuff! I've used it for my pot pie for a few

years and have also used it for BBQ 'chicken' sandwiches, etc. And it's

completely vegan.

 

Now, my pie on the other hand...I've made a new friend at work and she is

completely vegan. I turned her on to this Wheat Meat and I'd like to make a

pot pie for her but I don't know how to make it vegan. I was able to get a

pie crust recipe and figure I could use Soy Milk for the milk in the recipe.

But I can't figure out a suitable way to not use eggs. Could anyone give me

a suggestion?

 

Anyway, here's the recipe. If you try it I hope you enjoy it. If you don't

try it I hope you'll be able to find the Wheat Meat and use it. It's great!

Easy Vegetarian Chicken Pot Pie

Amount Measure Ingredient -- Preparation Method

1 2/3 cups frozen mixed vegetables -- thawed

1 cup Chicken Style Meat of Wheat -- cut up

1 box Vegetarian Chicken Gravy -- prepared

1 pie crust

1 cup Bisquick® baking mix

1/2 cup Milk

1 egg

 

Heat oven to 400 degrees.

 

Bake pie crust for about 10 minutes.

 

Mix vegetables and Meat of Wheat Chicken Style in with the gravy and pour

into pie crust.

 

Stir remaining ingredients together until blended and pour over the top of

the pie.

 

Bake 30 minutes or until golden brown.

Thanks for the recipe, Will, and the info about this White Wave

product!! I'm definitely going to put this on my " to try " list and,

from what you said, I think I will even try to fool my " anti-vegetarian "

(super picky-eaters) stepsons with it. <snicker, snicker>.

 

As far as your question about the egg -- to be honest -- I don't think

the recipe really needs the egg, and you could probably just leave it

out and not notice much difference. If you want to use a replacement

though, I suggest Ener-G Egg Replacer -- a powdered product -- you mix a

little with a little water to equal one egg. I also have a recipe for

making a similar concoction yourself if you want that.
