(On whole-grain bread. Begin by pressing the tofu. Place it on a plate and cover it with a baking sheet or similar flat object. Place a book or other heavy object on top of the baking sheet and let stand at least 20 minutes. Stir together the ginger, garlic, soy sauce, 3/4 cup of water, Sucanat, sesame oil, and mustard. Cut the pressed tofu into 1/4-inch-thick slices and arrange it in a single layer in a 13x9-inch baking dish. Pour the marinade over it. Marinate 30minutes or longer. Preheat the broiler.
