Confetti Cole Slaw

3 cups shredded green cabbage

1 1/2 cups shredded red cabbage

2 grated carrots

4 green onions with tops -- sliced

2 stalks celery -- thinly sliced

1 apple -- cored and diced

10 1/2 packages firm silken tofu

3 tablespoons seasoned rice vinegar

2 tablespoons apple cider vinegar

2 tablespoons lemon juice

2 tablespoons apple juice concentrate

1/2 teaspoon salt

1/4 teaspoon black pepper

 

This colorful salad is like a work of art!

 

Mix the cabbage, carrots, onions, celery, and apple in a large bowl.

 

Combine the tofu, vinegars, lemon juice, apple juice concentrate,

salt and pepper in a blender and process until completely smooth.

 

Pour the dressing over the salad and toss to mix.
