Adding the tang of lemon and the buttery crunch of pine nuts elevates the dish to a celebration of spring. 1. Prepare a medium fire in the grill. 2. Place the asparagus in a shallow dish. Drizzle 1 tablespoon of the olive oil on top and toss to coat. 3. Grill the asparagus, turning occasionally, until tender, about 8 minutes. Remove from the grill and keep warm. 4. Heat the remaining 1 tablespoon olive oil in a small pan over low heat. Add the pine nuts and cook, stirring, just until the nuts begin to turn brown, about 3 minutes. Stir in the lemon juice, then pour over the asparagus. Serve at once. Variations: This is also an excellent treatment for broccoli spears, long green beans, and long, thin carrots or carrot sticks. - - - - - - - - - - - - - - - - - -
