I made this a couple weeks ago and was amazed at how good it was! I used 2

packages of White Wave Chicken-Style Seitan. The sauce turned out super.

Mushroom Seitan Stroganoff

1/4 cup lemon juice

1/4 cup cooking sherry (or broth)

2 garlic cloves -- pressed

1 1/2 cups red onion -- chopped

1/2 pound mushrooms -- sliced

1 cup marinated seitan -- sliced into strips

1 tablespoon lite soy sauce

1/2 cup green peas

Sauce:

1 tablespoon arrowroot powder

1 cup water

2 tablespoons tahini

1/4 cup nutritional yeast flakes

freshly cracked black pepper

grated nutmeg

 

Serves 2 to 3. Saute the lemon juice and broth with the garlic and onion in a

large skillet for a couple of minutes. Stir in the mushrooms and simmer 10

minutes more. Add the seitan and soy sauce.

 

In a blender, blend together the sauce ingredients unti creamy, then pour the

sauce into a skillet. Heat at medium-low, stirring until thick and thoroughly

heated.

 

Stir in the green peas and simmer for a couple of minutes more. Sprinkle 2

tablespoons toasted walnuts or pine nuts on top and 2 tablespoons minced parsley

or chives. Serve over a half pound of cooked fettucine noodles.

 

Description:

" A creamy, slightly tart mushroom sauce with strips of seitan. Serve

over noodles for typical stroganoff, or over steamed broccoli or

cauliflower or baked potato for a lighter version. Quick to make! "
