A friend made this a couple weeks ago for a final class party - although no # of

servings is given, I'd guess 10 as is (more with additions like artichoke hearts

and black olives).

Pasta Fo' Y'All

Amount Measure Ingredient -- Preparation Method

1 pound rotini -- cooked al dente

1 15 oz can kidney beans

1 15 oz can corn kernels

1 cup basil leaves -- torn

1/3 cup celery -- minced

1 green bell pepper -- chopped

1 red bell pepper -- chopped

1/2 cup marinated artichoke quarters

3 medium tomatoes -- seeded and chopped

2 garlic cloves -- pressed

1/4 cup herbed vinegar or rice vinegar

cracked black pepper to taste

2 tablespoons liquid aminos (or herb salt to taste)

 

Toss all together in a large work bowl. (Your hands work best.)
