Guest guest Posted May 31, 2001 Report Share Posted May 31, 2001 more salads! * Exported from MasterCook * Soy Grilled Green Bean and Mushroom Salad Recipe By :VEGETARIAN GRILL by Andrea Chesman Serving Size : 4 Preparation Time :0:00 Categories : Chapter 04 Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound green beans -- trimmed 1 recipe Chinese Soy Black Bean Marinade and Dressing 8 ounces fresh shiitake mushrooms discard stems; slice caps 1/4-inch thick 1 scallion -- finely chopped 2 tablespoons chopped fresh cilantro 1. Prepare a medium-hot fire in the grill with a lightly oiled vegetable grill rack or grill-wok in place. 2. Place the beans in a shallow dish. Pour about half of the marinade over the beans and toss to coat. Place the mushrooms in another bowl, pour the remaining marinade on top, and toss to coat. 3. Lift the green beans from the marinade with a pair of tongs. Grill, tossing frequently, until the beans are tender and browned, 8 to 10 minutes. Remove to a large salad bowl. 4. Lift the mushrooms from the marinade with a slotted spoon. Grill, tossing frequently, until the mushrooms are tender and grill-marked, about 5 minutes. Add to the beans. 5. Pour any remaining marinade over the salad. Add the scallion and cilantro. 6. Toss just before serving at room temperature. The marinade has many layers of distinctively Chinese flavors, and it pairs beautifully with the green beans. If you don't have black beans with chili sauce, you can substitute chili paste with garlic for similar results. Nutr.
