Guest guest Posted May 31, 2001 Report Share Posted May 31, 2001 * Exported from MasterCook * Spicy Tofu Mushroom Salad Recipe By :A Celebration of Wellness Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound mushrooms -- halved 12 ounces firm tofu -- cubed 2 tablespoons ginger -- freshly minced 5 scallions -- slivered 1/4 cup sprouted sunflower seeds 1 lime -- juiced 2 teaspoons toasted sesame oil 1 tablespoon aminos or lite soy sauce 1/8 teaspoon cayenne 1 tablespoon veggie baco bits (optional) 1/2 cup loosely packed chopped cilantro leaves Steam mushrooms for 5 minutes. Put into a medium bowl. Toss in the rest of the ingredients, adjust seasonings as needed. Serve on a bed of clover or alfalfa sprouts with larger sprouts (pea, sunflower greens, buckwheat) radiating outward, Top with cilantro sprig, sesame seeds, and a red pepper ring.
