Cumin-Scented Grilled Vegetable Couscous

6 tablespoons extra-virgin olive oil

2 tablespoons balsamic vinegar

2 garlic cloves -- minced

1 tablespoon ground cumin

1 tablespoon minced fresh parsley

1 onion -- thickly sliced

1 green bell pepper -- quartered

2 small zucchini

sliced 1/4 inch thick

1 large eggplant -- peeled

and sliced 3/8 inch thick

1 1/2 cups cooked chickpeas

(or 1 15-ounce can) -- drained

1 1/2 cups diced tomatoes

Salt and black pepper

1 1/2 cups instant couscous

2 1/4 cups boiling water

The flavors of the Middle East make a rich marinade for the grilled

vegetables, which are served on a bed of couscous. This tasty one-dish

meal provides the grains, beans, and vegetables for healthy, hearty eating.

 

1. Prepare a medium-hot fire in the grill.

 

2. In a large bowl, combine the olive oil, vinegar, garlic, cumin, and

parsley. Add the onion, pepper, and zucchini and toss to coat. Brush the

remaining marinade on the eggplant.

 

3. Grill the vegetables, turning occasionally, until well browned, 10 to

15 minutes for the eggplant and onion; 10 minutes for the pepper; and 5 to

8 minutes for the zucchini.

 

4. Chop the grilled vegetables into bite-size pieces and combine in a

saucepan with the chickpeas and tomatoes. Add a little water if the

tomatoes are not very juicy and season to taste with salt and pepper. Keep

warm over low heat.

 

5. Combine the couscous and boiling water. Cover and let steam until the

water is all absorbed and the grains are tender, about 10 minutes. Uncover

and fluff with a fork.

 

6. To serve, spoon the vegetables over the couscous.
