Guest guest Posted May 29, 2001 Report Share Posted May 29, 2001 this is the recipe that i want to make. the photo caught my attention! * Exported from MasterCook * Grilled Vegetable Couscous with Halloumi Recipe By :BBC Good Foods July 2000 Serving Size : 4 Preparation Time :0:00 Categories : Pasta Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces couscous 1 1/4 cups hot vegetable stock 5 tablespoons olive oil 2 tablespoons lemon juice 1 garlic clove -- finely chopped 2 red bell peppers -- seeded cut each into 6 pieces 1 skinny eggplant -- cut into chunks 9 ounces halloumi cheese -- sliced into 8-pieces (see tip) 2 tablespoons toasted flaked almonds 1 tablespoon pesto sauce 1. Soak couscous in bowl with hot vegetable stock. 2. Grill vegetables: mix together the oil, lemon and garlic then brush a little over the peppers and eggplant. Spread the vegetables on the barbecue or grill and cook for 2 to 3 minutes each size until softened and slightly charred. 3. Grill cheese: brush the halloumi with some of the lemon and garlic oil (reserve some) and cook on the barbecue or under a hot grill for a minute or so on each side until golden. 4. Assemble: when the couscous has absorbed all the water, fluff it up with a fork. spoon couscous onto a serving plate and scatter over the vegetables and cheese and toasted almonds. Mix the pesto into the remaining oil mixture and drizzle over the vegetables and cheese. TIP - The cheese resembles a brick with round corners. Slice crosswise. Spray the knife with cooking oil to aid slicing.
