Banana French Toast

1 1/2 tablespoons egg replacer

4 tablespoons water

1/2 ripe banana

1/2 cup vanilla 'lite' soy milk

6 slices whole wheat French bread -- sliced 3/4 " thick

 

Serves 2 to 3. Preheat a griddle on medium-low at least 5 minutes before using.

 

Blend the egg replacer and water until frothy, using a blender or mixer. Put

into a shallow container or bowl with a flat bottom.

 

Put the banana and soy milk into the blender and whip a couple of seconds. Add

to the bowl with the egg replacer mixture.

 

Put the bread slices into the liquid mixture one at a time. Let each side soak

up liquid until soft. Turn griddle to low, spray with vegetable spray, then lay

bread on griddle. Flip the bread slices when each side is golden.

 

Serve with warm maple syrup and/or a fresh fruit garnish like orange slices and

strawberries.
