Swedish Oatmeal Pancakes

1 cup rolled oats

1 cup water

3/4 cup vanilla soy milk

2 tablespoons egg replacer

1 1/2 tablespoons baking powder

2 teaspoons maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon cardamom

 

Soak oats in water in a medium bowl overnight (or for 20 minutes) to soften.

 

Put soy milk, egg replacer, baking powder, maple syrup, and spices in food

processor and blend well. Fold blended mixture into oats. Heat up a skillet on

medium heat for at least 5 minutes.

 

Lightly oil the skilet and turn to low, spoon batter onto skillet to desired

size and cook until bubbles appear, or until the liquid sets. Turn over and

cook the other side.

 

Top with natural raspberry syrup or maple syrup.
