Guest guest Posted May 29, 2001 Report Share Posted May 29, 2001 * Exported from MasterCook * Vanilla Rice Cream with Blueberries Recipe By :A Celebration of Wellness Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup organic brown rice 3 1/2 cups water (or 2 C water and 2 C soy milk) 2 teaspoons vanilla 1/2 cup blueberries -- rinsed Maple syrup or honey drizzled on top Serves 3 to 4. Toast dry rice in a medium hot skillet for 2 to 3 minutes, stirring constantly until light brown. Finely grind in a blender or nut grinder until powdery. Bring water (and soy milk) to a boil in a large pot, whisk in rice cream; cover and simmer for 10 to 12 minutes. Stir in vanilla and sweetener of choice and top with fresh blueberries.
