Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 large Spanish onion -- sliced in thin rings

12 cups cold water to cover, approximately

1 cup granulated sugar

1 cup vinegar

1 cup water

1 tablespoon cooking oil

Slice peeled onion as thinly as possible. A food slicer makes this a

snap to do. Separate into rings and place in bowl. Cover with lots

of water. Let stand for 1 hour.

In small saucepan mix sugar, vinegar, water and oil. Heat and stir

until sugar dissolves. Drain onions. Pour sugar-vinegar mixture over

onions. Let stand in refrigerator, covered, for at least 1 day before

serving.
