This was last nights side dish. It was delicious. I love cooking with those

cute grape tomatoes. Just as good as the cherry tomatoes.

Bulghur Wheat Pilaf withTomatoes & Caramelized Onions

Amount Measure Ingredient -- Preparation Method

1 tbsp olive oil

1 large onion -- halved & sliced

1/2 lg carrot -- grated

1/2 tsp ground cumin seed

2 lg cloves garlic -- minced

3/4 cup bulghur wheat

2 cups vegetable broth

1 pint grape tomatoes -- washed & halved

 

Heat oil in a heavy skillet over medium heat (or a chicken fryer). Add

onions; saute until tender and brown, about 15 minutes. Transfer half of the

onion slices to a bowl and set aside.

 

Add carrot, cumin and garlic to onions that remain in the pot. Stir well.

 

Place bulghur and broth in a microwaveable container, cover with plastic

wrap and cook on HIGH for 3 minutes just to boil broth. Remove and keep

covered. When all the liquid is absorbed, place cooked bulghur with the

carrot mixture in the pan. If there is any liquid left, place it in the pan

too. Add the tomatoes and the reserved onions and stir well. Cook for a few

minutes to soften and heat the tomatoes through. Season to taste with salt

and pepper.
