I bought a bunch of Cascadian farms granola bars on clearance at Target (and I had coupons!). I am going to try the muffins; I'll pick up the veggies at the farmers market this weekend. We have entered the world of " morning rush for school bus. " Getting my daughter on a bus at 6:05 has been brutal. Getting a healthy breakfast in her is proving to be the most challenging part. She needs something to eat while we walk to the bus. She would probably eat the organic " pop tarts " every day, but they have too much sugar. She does have a glass of enriched soy milk before she does anything. She won't eat a breakfast burritto because she has decided that it will give her bad breath (I suspect that this is because she is developing and interest in boys, I am so not ready for this); she'll have a smoothie once week, but told me they aren't good in cold weather. The school had junk-filled vending machines that are very tempting for a hungry child. Other than a tortilla or piece of toast with egg and cheese, does anyone have ideas? Robin Moody friends. Guest guest Posted September 13, 2007 Report Share Posted September 13, 2007 we make snack " balls " or " bars " ... take dates or prunes, a little water, throw in a food processor or blender until liquid... add in a few tablespoons of a nut butter (we usually use almond for the calcium) ... take it out of the f.p.... mix in oats , coconut, other small pieces of nuts and dried fruit, carob or chocolate chips, etc... ... roll into small balls and roll in coconut, OR make the mixture a little thicker and press into a flat pan/tupperware... whichever style you make, refrigerate for a few hours or overnight- they keep for a few weeks in the fridge, so I usually make a big batch in case we have to run anywhere... they're great for breakfast, snacks, etc...
