Guest guest Posted May 4, 2007 Report Share Posted May 4, 2007 Welcome, Kara, You will get a ton of advice, here's mine: kiwi and blueberries are loaded with nutrients. my daughter eats a kiwi and a bowl of frozen blueberries every day. take your kids to the store and let them pick a " new " veggie and let them help prepare it. go to the library and get a kids cookbook (i love the moosewood). let them pick recipes, put together a shopping list, pick the items and prepare (so many good lessons here) hide the veggies! soup and chili are great for this. cook the veggies in the pot; if they are still identifiable, take them out and puree them and put them back in the pot shredded carrots and zucchini under the cheese in pizza kids love to dip! fruit in yoghurt, veggies in hommous and dips don't be afraid to give your kids something that you don't like; they may surprise you Robin Kara Keeter <karakeeter wrote: Hi Heather and Liz! Guest guest Posted May 4, 2007 Report Share Posted May 4, 2007 My daughter eats broccoli, carrots, asparagus, lettuce and friend zucchini. That is the only vegetables that she eats. The way I see it there are 4 food groups (legumes, grains, fruits and vegetables). We only try to get 2 servings of vegetables a day. If we do more than that great. If not, 2 servings is good because she gets lots of nutrients from the other healthy food she eats. http://www.pcrm.org/health/veginfo/vsk/food_groups.html Breakfast 2 waffles, veggie sausage and fresh sliced strawberries. (2 grain, 1 legume, 1 fruit) chocolate silk (1 legume) Lunch whole wheat pita bread with hummus and sliced carrots (1 grain, 1 legume, 1 vegetable) orange (1 fruit) veg*n yogurt (1 legume) apple or grape juice box (per her pediatrician juice does not count toward fruit because no fiber but it still has vitamins) animal crackers (doesn't count) Afternoon Snack apple sauce cup (1 fruit) Dinner 1/3 veggie riblet (fraction of a legume) 1 cup broccoli (1 vegetable) 1 cup brown rice (2 grains) Total: 5 grains 3.3 legumes 3 fruits 2 vegetables Bored stiff?
