Okay, I know it is a lot later, but here is my pre-vegan recipe for banana

blueberry bread. I haven't tried it with soy yogurt or egg replacer, but as

written it is wonderful! Everyone always used to ask for the recipe. Lower Fat

Banana Blueberry Bread With Streusel Topping Ingredients: Bread 2 Cup Sugar

1 Cup Oil

2 Cup (Approx. 2 Medium) Mashed Ripe Bananas

1 Cup Low Fat Plain Yogurt

2 Teaspoon Vanilla

4 Eggs

4 Cups All Purpose Flour

2 Teaspoon Baking Soda

1 Teaspoon Salt

2 Cups Fresh or Frozen Blueberries (Do Not Thaw)

Ingredients: Streusel 2 Tablespoons Flour

2 Tablespoons Brown Sugar

2 Tablespoons Finely Chopped Pecans

1 Tablespoon Oil

½ Teaspoon Cinnamon

½ Teaspoon Vanilla

Heat oven to 350°F. Grease and Flour bottoms of loaf pans (can use mini

loaf pans). In large bowl, combine sugar and oil: beat well. Add to this mixture

bananas, yogurt, vanilla and eggs: blend well. Add flour, baking soda and salt:

stir until just moistened. Gently stir in blueberries. Pour into prepared pan.

In separate bowl combine streusel ingredients and mix well. With a spoon spread

streusel mixture over loaf pan and lightly press into mixture.

Bake at 350°F for 60 to 70 minutes (slightly less for mini loaves). Cool

in pan approximately 10 minutes then remove from pan. Cool completely. Best

stored in fridge.
