I've made the corned 'beef' seitan from www.vegan-food.com. It was very

yummy. :) It's even pink - from beet juice! :)

 

Other than that I've just made herbed potatoes (cook till soft but not mushy

- like they'd be for potato salad). Add your fav. vegan margarine, parsley,

stir. (I also add dill and parsley sometimes). If you overcook the potatoes,

you get herbed mashed potatoes, which is still really yummy. :)

 

That's all I've got.

this month's issue of vegetarian times has the following st. patrick's day

recipes:

 

carrot souffles

warm leeks w/toasted walnuts (vegan)

vegan colcannon

potato gnocchi w/butter and sage

flaky cheddar scones

oatmeal-rhubarb crumble

 

and the cookbook by bryanna clark grogan has these st. patrick's day recipes in

the

(almost) no fat holiday cookbook (all vegan):

 

vegetarian irish stew w/guiness stout

herbed oatmeal oven scones

colcannon (pashed potatoes w/cabbage or kale)

irish apple bread pudding

 

if any of these sound interesting to you, you can check your local library for

the magazine/

cookbook, or if you would like i can scan the recipe in and email it to you.

I'm heading to the library tomorrow, so maybe I'll be lucky and

find your suggetions! If don't I may take you up on your offer to
