Guest guest Posted February 14, 2007 Report Share Posted February 14, 2007 Chocolate Coconut Cookies 2 tbl spoons cocoa (no sugar, raw) 1 banana 2 tbl spoons coconut oil 1 cup coconut flour 1 tsp vanilla 1/4 teaspoon salt mash banana and coconut oil. Add the rest of the ingrediants and kneed like bread. Form into little balls and press with oiled fork on a cookie sheet. Cook until lightly brown at 350 degrees. You can vary these. I make thumbprints by making little divets with my pinky and put fruit spread (no sugar) in them. Add more coconut oil if the dough is too dry. Increase the recipe to suit your needs. Cherry Bon Bons Special thanks to Ruth at Harmonious Living Filling: 2 Cups Frozen Cherries 4 Frozen Bananas Coating: 2.5 Cups Raw Almonds 1 TBLS Vanilla 8-10 Dates 4-6 TBLS Water 4 TBLS Raw Carob Run Frozen cherries and bananas through the Champion with blank, mix and put into ice cube trays and back in freezer. Put raw almonds in food processor and blend till very fine. Save out half a cup or more for rolling in. Add vanilla, dates, carob and water till get good consistency. Refrigerate till filling in freezer is set good. Take filling out of freezer and have each piece ready to cover with coating. Then pinch off carob/date mixture coating and flatten between hands (wet hands so doesn't stick). Wrap around frozen filling, roll in ground almonds and put back in freezer. The number it makes depends on the size of the filling and how thick or thin you make the coating. Also there are many vegan cupcake recipes on the web. You can substitute dates for sugar in recipes...and bananas sweeten things well too (but give a banana taste). There are also many raw food recipes that are excellent and creative that they can actually make in class (if the teacher is up for a project).To the kids, they are eating cookies but they are nothing like the garbage out there! I think it is very important that children don't get sugar every day or a least a VERY small amount. Guest guest Posted February 14, 2007 Report Share Posted February 14, 2007 Hi All, Here is another recipe that I've been making for many many years for birthdays in the class room and after school snacks, etc. It has variations, but is generally high in grains, and low in sugar yet very delish. All kids love them with chocolate chips. Tracy Vegan Bran/Almond/Wheat Germ Muffins 2 cups flour (whole wheat, pastry or white) 1 cup bran or wheat germ or ground almonds 1 ½ tsp baking soda ½ tsp salt 2 cups soy milk to which 1 T apple cider vinegar has been added ½ cup maple syrup or agave nectar ½ cup oil ½ cup raisins or dried cranberries or vegan chocolate chips Stir dry ingredients together and make a well in the middle. Pour in the liquid ingredients and stir enough to moisten flour. Add the raisins or chips. Spoon into 24 medium muffin tins. Bake at 425 for 11-13 minutes.
