Something I learned from this very group is cabbage smoothies - no joke. Throw one or two raw cabbage leaves (I usually use napa, but the purple cabbage is good too) in with frozen fruit & soymilk and blend the heck out of it. You can't taste the cabbage at all. Muffins, too. If you use a recipe that uses applesauce, you can experiment with using pureed veggies up to half-and-half instead. Kale apple muffins are surprisingly good, although usually I use milder veggies.
