Guest guest Posted January 17, 2007 Report Share Posted January 17, 2007 I just wanted to thank everyone for their suggestions on how to replace eggs in a recipe. One I found especially useful was the website vegetarian.about.com where they actually tell you that half a banana will replace one egg - I knew bananas could replace eggs, i just didn't know how much to use. Well, I made two batches of my Friendship (fruit) cakes. The first one I used a whole banana to replace two of the four eggs and then Egg Replacer for the other two, plus 2 extra Tablespoons of water. That batch turned out rather gooey. So, I read some more and saw a suggestion to add more baking powder when using Egg Replacer. So, in my next batch I did as above, but added 2 teaspoons of baking powder to my cake mix. And other than being a little sticky, the cakes turned out almost like when I used eggs. Now, if I ever get brave enough I'll try to figure out how to make these cakes from scratch instead of using a cake mix. Thanks!
