Guest guest Posted October 24, 2006 Report Share Posted October 24, 2006 Several studies have shown that baking at " normal " baking temperatures (350 F)does not harm the beneficial omegas in ground flax. I had a really great article on this but can't find it or the link. I did find the following http://www.flaxcouncil.ca/english/pdf/stor.pdf The article states that even ground flax in the crust of baked goods is stable. I have seen a post that suggested flax seeds sprinkled on the top would not be beneficial. But then, they are not ground anyway. One thread, quite a while ago, on vegsource included a woman whose husband was doing his thesis on degradation of foods when microwave dried. She was going to ask him if microwaving had any effects but I never saw her reply. Maybe someone here knows of that or other research re: m'wave flax seeds. There are also misconceptions about how fast the oil goes rancid. Bottles should be refrigerated but small amounts can be used unrefrigerated. I have info on this somwhere too. (Most of my printed info is in long term storage as we are still waiting for post hurricane work to begin on the house.)We are backpackers. I spoke to the people at Barleans (to complain about nonvegan capsules). I found out that the owner carries his flax oil bottle in a ziplock bag (to protect from spillage) in the middle of his backpack when he goes out for a week or more at a time. (Light and oxygen as well as high heat and cooking are invovled in the oxidation- dark bottles and not opening the container often will decrease the first two.) Far into the future, I will try to remember to find my print info if anyone is still interested in it. Right now I must close as holding my broken arm at this angle to type is becoming uncomfortable.
