I also pack my lunch for work and one of my staples that is quick to make in the morning is a hummus & tabouli wrap. I start with an ezekiel sprouted tortilla and spread a thin layer of hummus then a layer of tabouli and then fill it in with whatever veggies i have on hand - usually mixed greans like arugla and/or sprouts, some shredded carrots or radishes and sometimes if I'm out of tabouli i might add slices of avocado. Then i just roll up up like a borrito and add some fruit on the side and I'm good to go!
