I spray a mist of canola or olive oil, then spray a bit more if the pan starts to look dry as the veggies cook. I use a glass lid so there will be some steam cooking in addition to a touch of char grilling on the outsides and sometimes I put in a few drops of hickory or mesquite liquid smoke flavor. This works for all kinds of veggies or mushrooms, plus veggieburgers patties. I let hamburger buns or french bread steam on top of the veggies for the last minute or so. --- Be kind. There is a cast iron pan that has the raised grill if you want grill marks. (I don't know where to purchase it.)
