Don't know where you are in WV (I'm from Parkersburg originally)... but there are tons of great veg options in Morgantown if you ever make it up that way:) Mountain Peoples Co-Op a few Indian places Asian Garden Restaurant (Thai, Chinese, Malaysian - large veg menu with faux meats!) The Black Bear Maxwell's most of the other non-chain restaurants have at least one veg item (usually more) on their menus... also, there's a Mexican restaurant called Rio Grande - they are a small WV chain- they have a decent veg menu and locations in Morgantown, Lewisburg, Huntington, Beckley, Charleston, Scott Depot, Martinsburg, Nitro, and Athens, OH. The manager in the Motown location has assured me the beans and rice are vegan (although you should check your location too to be sure), and you can order anything you want without cheese.
