We just had it for dinner tonight and I used my new Panini maker that I got for my birthday. Veggie Melt Panini 2 c. Broccoli - chopped in small pieces 1 c. Cauliflower - chopped in small pieces 1/2 c. Onion, diced 1 Green Pepper, diced 8 Mushrooms, sliced 1 Carrot - sliced in thin pieces 1 Tomato - diced into small pieces Saute the above ingredients in a large frying pan with 1 Tbsp. of Smart Balance/Butter until tender crisp. I cover and stir often. Add to taste, Ms. Dash, Salt and Braggs Lqd. Aminos/Soy Sauce. When tender crisp, cover with 3/4 c. each of shredded Cheddar Cheese and Parmesan Cheese. Cover your frying pan and let the cheese melt over the Veggies Mixture. Take French Bread or thick Bread of Choice and butter/Smart Balance the outside. Add the Veggie Mixture onto that slice of bread. Cover with the top piece of bread and butter the outside of that piece. Toast and press in a Panini Maker. Cook until nicely toasted and Crispy. You may also make this in a frying pan and weigh it down with a Iron Skillet. You will have to turn it over to cook the other side, if you make it this way.
