Thanks, Tracy, for the seitan recipe!

 

What's a vegetarian to do at/with a barbecue? One of my favourite

recipes is so easy that I can actually do it. But very tasty.

 

Simply take large vegetables: potatoes, jerusalem artichokes

(sunchokes), sweet potatoes/yams, carrots, etc. Cut them in half. Soften

by placing in a covered pot with a little water (say, 1/2 inch) and a

little salt. Bring to a boil and simmer until about HALF " done " .

 

Then dip in or brush on olive oil and crushed garlic -- and place on the

grill.

 

We did this last weekend with sweet potatoes -- and our omnivorous

friends loved them (and the veggie burgers we force fed them).

 

What's this have to do with seitan? We used the water from the sweet

potatoes as stock for making seitan the next day.

 

Then yesterday, the water the seitan was cooked in became sock for a

great soup my wife made in the slow cooker we just picked up for $2 at a

yard sale!
