Guest guest
I finally found a kale recipe that my extremely picky eater will chow! Usually I hide it in stuff (the only vegetable she willingly eats is broccoli), but this is right out in the open. I took a pound of tofu, pressed, drained and cubed. Half a bunch of kale and five ice cubes, pureed in the blender a TBSP of red miso paste a dash of Bragg's liquid aminos some leftover couscous - maybe 1/2 C and what I had left of a bag of nutritional yeast - probably about 2-3 TBSPs cooked the kale juice, miso, and Bragg's, stirring together until smooth and bubbly added the tofu cooked (stirring pretty often) until the tofu gave up the rest of its liquid added the couscous and yeast cooked until it was tofu with a thick sauce looks like palak paneer, kind of. The child is now asking for seconds! Whoohoo! (Oh, and I think it's yummy too.) -- kt http://coffeeandcables.blogspot.com/
