Leaving aside what I think of it, they've always been very considerate of my dietary needs and I'd like to return the favor. Does anyone know of a (preferrably free, online) source for lacto-vegetarian Atkins recipes? (Am I going to wind up serving her just a big hunk of cheese? Argh...) Here's a good website for lots of raw food recipes. Some of them are pretty good! http://www.living-foods.com/recipes/ Since your friend is probably craving carbs and can't have things like pasta, she might especially appreciate a side dish of raw zucchini " pasta " with sun-dried tomato sauce. It's probably got some carbs, but I think it still may qualify as Atkins-friendly (and it certainly has WAY fewer carbs than real pasta!). I've made this dish lots of times and all my non-veg non-raw friends LOVE it and can't believe it's veg and raw. It's easy. Just use a citrus zester like this one: http://www.crateandbarrel.com/family.aspx?c=746 & f=4627 & q=zester & fromLocation=Sea\ rch & DIMID=400001 & SearchPage=1 to turn the zucchini (by the way you can also use carrots, beets, squash, etc) into long " pasta " strips. Then, for the sauce, blend sun dried tomatoes, olive oil, garlic, herbs, salt and pepper to taste until you have the consistency of a thick tomato sauce. You might have to add a little water to keep your blender going, but try not to add too much. The best thing to do is to periodically turn off the blender and move the contents around with a spoon to get rid of air bubbles that get the blender stuck. Just keep blending and stirring and be patient. The more patient you are without adding too much water, the thicker and richer your sauce will be. Hope this makes sense... Also, I have known people on Atkins to be very appreciative of green vegetables, especially spinach. They are low in carbs and usually a welcome change from all the meat they normally eat. Good luck!
