Hi Andrea,

Are you a veggie/vegan? Or just your son? I'm not sure if you are

new to the group and I didn't want your questions to get missed being

burried in this long thread about pros and cons of being veg*n in a

meat-eating world. In college my husband and I got a book called

" Meatless Meals for Working Families " that had a lot of great quick

ideas in it. They aren't all vegan but those that aren't could

probably all be veganized we did that with the eggplant bake. Another

great resource is www.vegweb.com that has a lot of great quick recipes

that are all vegan. We have a ton of vegetarian and vegan cookbooks

in our house but neither my husband nor I like to spend a lot of time

cooking so we tend to stick to our 'tried and true'. Also check out

Peta's accidently vegan list for ideas of easy to get (your regular

grocery store) foods.
