Actually in order for them to work, DON'T stick to the recipe, hee hee. It seems the less attention I pay to making them, the better they turn out! Enjoy! " Yummy Muffs " (that's what my kids call them...) Wet ingredients 1 c. applesauce 1 c. soymilk + 2 tsp. vinegar 2 eggs' worth of egg replacer (I use Kings Mill) 2/3 c. sugar Dry ingredients 1 1/2 c. oats (I use old-fashioned oats, slightly ground in a food processor) 1 c. ground flaxseed 1 c. oat bran 1 c. whole wheat flour 1 1/2 tsp. baking powder 1 tsp. baking soda 1/2-1 c. raisens/currants/whatever dried fruit or nuts you like (apricots would be really good, mmm) Mix all wet and dry ingredients in separate bowls, then mix them together till moist. Add a little more liquid or oats if needed. Bake at 350 - well, I'm not sure how long. Start checking with toothpicks after about 25 minutes. ~ Makes 12 large muffins This consists of two or three " Company's Coming " recipes, combined and altered so much I shouldn't have to credit them anymore.
