Guest guest Posted February 10, 2006 Report Share Posted February 10, 2006 Here's my recipe adapted from " Muscle Muffins " from the book Raising Vegetarian Children by Joanne Stepaniak and Vesanto Melina. They're nice and soft when I use flax seeds, and next time I'm going to try whole wheat pastry flour instead of regular. A friend puts blueberries in them and they're really yummy. 1 cup whole wheat flour 1 cup unbleached white flour 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon cinnamon 2 frozen or fresh ripe bananas 3/4 cup soymilk 1/2 cup soy protein powder (2 scoops)--I don't use this. I add 1/4 cup of ground flax seeds instead. 1/4 cup safflower oil (I usually use canola) 1/4 cup blackstrap molasses 1/4 cup maple syrup--I use half a cup of apple sauce instead 2 teaspoons apple cider vinegar 1 cup raisins or chopped dates (I leave these out for now) Preheat oven to 350 and oil muffin tin or spray with nonstick spray. In large bowl, combine flours, baking powder, baking soda, and cinnamon, and mix well. In a smaller bowl, mash bananas, then stir in soymilk, protein powder (if using), flax seeds (if using), oil, molasses, syrup or apple sauce, and vinegar. Add banana mixture to dry ingredients, stir till blended, then add raisins or dates (if using). Fill muffin tins and bake 30 to 35 minutes or until done. I added chocolate chips and blueberries. I used whole wheat pastry flour exclusively. I also used coconut oil. Yummy! Also, my muffin tins are rather small and I baked them for only about 20 minutes.
