I always add something too it: raspberries and chocolate chips are my family's favourite, but we also like chopped dates, raisins or dried cranberries. I always double recipes when I'm making muffins (and with this recipe, I don't even bother putting any in the freezer because they disappear so fast!). You can easily make substitutions to make this vegan. 1 cup whole wheat flour 1 cup bran 1/4 cup wheat germ 3/4 tsp salt 1 tsp baking powder 1 egg 1/2 cup molasses 1/2 cup oil (I often use 1/4 cup oil and 1/4 cup honey) 1/2 cup milk (I use buttermilk) 1 tsp vanilla Thoroughly mix the dry ingredients. Blend the wet ingredients together and stir into the dry ingredients with any add-ins until just combined. Put in muffin tins and bake at 350 for about 20 minutes. (From " More Food That Really Schmecks " by Edna Staebler) _____ Soft Pumpkin Cookies 1 1/2 cups raisins or dried cranberries 1/2 cup butter or margerine, softened 1 1/4 cups packed brown sugar 1 cup canned pumpkin puree (NOT pie filling) 2 tbsp applesauce 1 egg 1 tsp vanilla extract 1/2 tsp ground ginger 1/2 tsp ground nutmeg 1/2 tsp ground cinnamon 2 1/4 cups flour (I use whole wheat pastry) 1 tsp baking soda 1 tsp baking powder Cream butter and sugar until fluffy. Add pumpkin, applesauce, egg, vanilla and spices. Beat until well mixed. In another bowl, sift together flour, baking soda and baking powder. Gradually add to pumpkin mixture, stirring until just combined. Stir in raisins. Drop spoonfuls of batter onto baking sheet. Bake in in preheated oven for 12 minutes.
