Chessie On Behalf Of DJ Monday, February 06, 2006 11:41 PM nut loaf My nut loaf recipe isn't far different from Chessie's, only using tomato or spaghetti sauce and nuts instead of veggie crumbles and ketchup. I never used crackers, just chunks of dry bread or toast, but crackers would be fine. You can use shredded cheese instead of eggs if you like, and experiment with the veggies too; shredded carrot or chunks of bellpepper, squash, corn, peas, small pieces of broccoli, rice etc. are all good mixed in the loaf. Instead of basting, I cover the whole thing with a layer of mashed potatoes, which serves the same purpose. If made in a bread pan, the mashed potatoes are in turn covered with a thin spread of tomato sauce and a few cheese crumbles. The tomato sauce will dry out but not the rest of the loaf. If made in a shallower casserole dish, use a cover or cover with foil to prevent it drying out too much. ------ " Chessie & Tracy " <vegetariyum I make a very tasty loaf - vegetarian and based on my mom's carnivore recipe. Mix veggie crumbles (thawed or rehydrated) with ketchup, soy sauce, crushed crackers or bread crumbs, two eggs or equivalent, chopped mushrooms and diced onions. Basically I just adjust the liquid and cracker amounts until the loaf sticks together really well, and then bake it in a pan with some water in the bottom. You have to baste it once or twice so it won't get too dry, but it is really good, and makes great leftover sandwiches!
